Oh right...you guys don't like pumpkin. The last time I made the recipe above we didn't have pumpkin so I substituted butternut squash and it was just as delicious. I had frozen butternut squash chunks, microwaved them and mashed them before adding them to the dish. Anyway, the pumpkin pancakes were really tasty!! No overpowering pumpkin flavor. We will make them for you the next visit :)
I don't mind pumpkin in something else - like the pasta dish. But when pumpkin is the star, as in pie, not such a fan. I do like the idea of using butternut squash though - that sounds really good.
